How do I take an M-Pesa payment on Veira?

Short answer

Take the M-Pesa payment on your Till or Pochi as usual, then record it against the sale in Veira so the payment and the product are linked. That link is what lets your month-end statement also tell you what sold, who sold it and on which shift, instead of a wall of unmatched messages.
